Confused with what to make for lunch/dinner today? Make this very easy, loaded with vegetables Chinese dish. The dish is popular throughout the Chinese diaspora and appears on the menus of most Chinese restaurants abroad.
It is particularly popular in India, Nepal, UK,USA.
This recipe calls for all stir fry vegetables. So dump in the vegetables that are going bad in your fridge and you need to use asap.
INGREDIENTS
2 tablespoons vegetable oil- I prefer Peanut Oil
1 cup broccoli florets
1 cup celery thinly sliced
1 cup bell peppers
1 carrot thinly sliced
1 cup snap peas (optional)
2 cloves garlic minced
2 tablespoons dark soy sauce
2 tbsp light soy sauce
1 tbsp vinegar/lemon juice
2 tbsp sweet chilli sauce
1 cup water
12 ounces chow mein noodles cooked al dente
6 ounces bean sprouts optional
sesame seeds for garnish optional
INSTRUCTIONS
Mix all the sauce ingredients together and keep it aside
Boil the noodles al dente. Add 2 tbsp of salt to boiling water then add noodles and cook for 10-15 minutes. Drain and keep it aside.
Heat a large pan or wok on medium heat with the oil. Add in the broccoli, celery, bell peppers, snap peas and carrots.
Cook 2-3 minutes until wilted, add the garlic and cook for an additional 30 seconds.
Add the sauce mix.
Add in the noodles and toss to coat.
Adjust the seasoning and serve warm.
