This veggie medley is so easy and quick to make. Full of healthy ingredients- makes for a perfect side dish.

Ingredients⠀(Makes 8 servings)⠀
1 lb baby carrots⠀
1 lb green beans cut in half⠀
3 red onions, peeled and thinly sliced⠀
2 red bell peppers- thinly sliced⠀
2 yellow bell peppers- thinly sliced⠀
8 sprigs fresh thyme⠀
5 cloves of garlic or 1 tbsp garlic powder- optional⠀
1 tsp paprika or black pepper⠀
Salt to taste- I added about 1 tbsp
1/2 cup olive oil⠀
1 1/2 tbsp dried basil⠀

Instructions
Preheat oven to 400degrees F.⠀
Line a shallow baking tray with aluminum foil.⠀
Spread baby carrots, green beans, onions, peppers, thyme sprigs on baking sheet.⠀
Sprinkle with salt and pepper/paprika.⠀
Whisk garlic, olive oil, basil, salt and pepper together in a small bowl. Pour the mixture over vegetables and toss to coat evenly.⠀
Roast for 20 minutes.⠀
Using a wide spatula, turn vegetables.⠀
Roast 15-25 minutes more, until tender⠀
