This salad is perfect for hot, summery days. The sweet and cooling effects of watermelon combined with mint and add some feta to it and your perfect sweet and sour salad is ready. It's so easy to make, chop all the ingredients, add a very simple easy olive oil dressing, and voila- healthy, cooling watermelon salad is ready to eat.
This healthy watermelon salad has many nutrients. Watermelon is mostly water, which helps hydrate you and fill you up. This fruit is low in calories and full of vitamins C and A. And, arugula is a good source of calcium, potassium, folate, and vitamins C, K, and A.
Ingredients
6 lb. whole seedless watermelon, chilled (about 12 cups of cubed fruit)
1/4 cup fresh mint leaves, chopped
1 cup crumbled feta cheese (sheep's milk feta preferred)
2 cups arugula or any spring mix with arugula
Dressing
2tbsps extra virgin olive oil
2 whole limes, juiced
1 tsp salt
1/2 tsp black pepper
Instructions
Note: This salad is best made just prior to serving. Prepare one hour or less before your meal.
Cut rind from the watermelon, then chop the fruit into 1-inch chunks. Place chunks in a colander to drain as your chop.
In a small bowl, whisk together olive oil, fresh lime juice, salt, and black pepper to create a dressing.
Place watermelon and arugula in a large salad bowl. Pour dressing and chopped mint over the watermelon and toss gently to coat.
Pour the crumbled feta into the salad bowl and stir gently to integrate the cheese into the salad. Serve.
Variations:
Sub mint in this watermelon salad for basil or cilantro.
Add cucumber or red onion for extra veggies.
Swap the feta for goat cheese.
You can use 2 tbsp of Balsamic Vinegar instead of making the dressing.
